Being responsible for a friend’s purchase of an iPhone in France, I apologize greatly and offer these images to allow him a softer landing.
I am highlighting those applications I end up using more often.

This is the front page, so it has applications I use most often. The Help Me application is useful in the U.S. as it can store the emergency number 911, if for instance I feel threatened late at night somewhere, I don’t need to look at the phone but just click at the application and within a number of set seconds, the application would dial 911.
Maps is most useful to know when public transportation passes by a certain geographic location.
Safari can become important if you have important bookmarked pages in memory. I check out radar maps (just had a tornado warning!).
Alarm Tunes is useful for using the iTunes music to wake up to it, but be careful that it all works (possibly needs to be the last application used before sleep).
Attendance is useful if you teach (much better than any of the competition).
iThoughts is probably my favored application. It is the best one for “Mind-mapping” your ideas for a presentation, a paper, and possibly your projects, tasks, etc…
ShapeWriter was very good for speed-writing in English, until the advent of…
Dragon Dictation which allows one (in English) to dictate the content of e-mail, texts, notes, etc… Pretty accurate and a time-savior.
Dragon Search does the same thing but with a great variety of search engines (Google had a similar application but this one wins).
